Aetos Sparkling Rosé Brut 2016

Made from 100 % Sangiovese grapes. Harvested early in the season and by hand. A white wine vinification process is used, with fermentation in stainless steel tanks. The sparkling wine fermentation process takes place in an autoclave using the Charmat method, followed by ageing in an autoclave for around two months.
The growing season of 2016 saw a cool and rainy spring, which made vineyard pest management complicated. However, the typically Mediterranean summer was sunny and dry, providing perfect growing conditions for the vines. The slow ripening of the Sangiovese grapes allowed them to develop an unusually complex and well-balanced range of aromas and polyphenols.

Bright salmon-pink in colour with a refined and persistent perlage. Fine and elegant on the nose with notes of white flowers and fresh red fruit. The attack in the mouth is lively and refreshing, while the finish is dry and full of flavour.
